The Perfect Bruschetta


Probably my favorite ever comfort food to eat on a night when I don't really feel like cooking or maybe I'm just not that hungry is Trader Joe's Bruschetta Sauce on crostini with prosciutto. I've sung its praises before, but it bears repeating that this stuff is to die for! Especially with a glass of red wine, it can literally cure any bad day blues.


It requires minimal prep, starting with slicing a baguette thin on the diagonal. You might only want 2/3 of the baguette as it's quite filling, so save the rest (unsliced!) to eat toasted with jam in the morning.


Once you have your bread slices, lay in a single layer on a baking sheet and either brush with butter or oil, or spray with oil! These Trader Joe's oil sprays are one of my favorite things in the world. They save so much time for tasks like this, and they're awesome for spraying your cast iron skillet. Typically, I use olive oil, but you can also just use whatever you happen to have on hand, like this day I used coconut oil and it tasted great.


Then sprinkle some cheese on each piece of bread. I like the quattro formagio cheese from Trader Joe's, but any Italian cheese like parmesan, mozzarella, etc will do beautifully.


Pop the crostini under the broiler for a few minutes, but do not step away. You must keep watch as they toast and the cheese bubbles very quickly!


When they're ready, they'll look like this. It's a good idea to let the crostini cool for a few minutes before serving. 


Gather up all the fixings, including the delicious bruschetta and take them to wherever you're sitting - this is great in front of the TV if you have a coffee table!


Or hustle outside before Al Fresco dining season is completely over. As is typical, I always forget to take a photo of the finished product. To enjoy, just scoop some bruschetta onto a crostini, tear off a piece of prosciutto and pop on top and enjoy! Sort of messy, but totally worth it. Buon appetito!
